Easy Slow Cooker Mexican Casserole


Tonight I was twiddling my thumbs waiting for dinner…it was great- gotta love using a slow cooker.  Now, based on some friends’ postings on facebook there are drawbacks to using a slow cooker:

  1. You have to remember to turn it on after you plug it in.
  2. Your schedule might not allow for you to be home to start it later in the day OR to turn it down to warm or off when it is finished.

However, if you have a few good recipes the slow cooker can be a blessing from above!

This recipe is one that only takes about 4 1/2 to 5 hours on Low.  So if you work away from home all day and can’t get back at lunch to start it.  Then save this recipe for Saturday or Sunday when you don’t really want to be in the kitchen all day preparing a meal and cleaning the kitchen.

Easy Slow Cooker Mexican Casserole

Combine in a skillet:

  • one pound of ground beef (or you can use turkey but season it more)
  • diced onion (I would use about 1 cup)

Brown the meat and drain.

Return to skillet and add:

  • One package of taco seasoning
  • One can of Ro-Tel  (if you don’t have Ro-Tel then you can use a small can of diced chilies and a can of diced tomatoes)

Simmer for 5 minutes.

Spray your Slow Cooker lightly with cooking spray (or use a liner)

Place into the cooker in this order:

  • 4 corn tortillas covering the bottom of the cooker
  • 1/2 the meat mixture
  • 1/3 of a can of condensed cheese soup or you can use the condensed fiesta nacho cheese
  • 3 corn tortillas
  • the rest of the meat mixture
  • 1/3 of the cheese soup
  • 3 corn tortillas
  • 1/3 (the last) of the cheese soup
  • 1 1/2 -2 cups of grated cheese
  • 1 cup of milk poured evenly over the entire casserole

Place the lid on and set to low.  Cook for 4 1/2 to 5 hours.

  1. Yes, you can get Ro-Tel at the grocery store but it is a bit pricey. I get it at Target or Wal-Mart when I need to purchase it (lately though my SIL has kept me well stocked!)
    Wal-Mart has an off brand that is pretty reliable of it.
