Pita, Cheese, and Veggie Grill

I always forget how yummy this one is.  It is easy and Brad and I always fill up on it.

Cut:

  • 1 zucchini in half lengthwise
  • 1 red onion,  in 1/2 inch think slices

Drizzle Italian salad dressing over them (about 1/8 c) and sprinkle with salt and pepper.

Gill the zucchini and onion for 8 minutes or until tender- turning once halfway through cooking.

Remove the veges.

Grill

  • 4-6 pita rounds until lightly toasted
  • 2 tomatoes cut in wedges until lightly charred.

Place 6-8 oz of feta cheese, crumbled up, in a skillet and warm until the shees is softened.  You can put more Italian dressing on the cheese if you want.

Cut up the zucchini into chunks.

Each person can build their own pita of grilled goodness! 

Drizzle with honey and more Italian dressing (if desired)

Now, this is one of those meals I have to think about what my kids will eat.  They aren’t big vege eaters so what I did was roll up some deli ham and turkey for their protein along with watermelon balls for our fruit.  I made a salad too thinking Heather would eat it and Brad and I would have some too.  Well, H ate it but Brad and I didn’t touch it!  Too much grilled goodness for us!

Em loves the pita bread with honey drizzled on it and H had plain pita bread.  So everyone was happy at the table.
