Chorizo Burger Wraps


Someone asked me, offline, for this recipe so I told her I would post it here.

I found this recipe in Woman’s Day back in June of 2007.  I calls for 2 dried chorizo sausages (4 oz total) that you half, remove from casing and cut in small chunks BUT I can barely find chorizo let alone dried chorizo up here in PA so I use just regular chorizo from the meat counter.

  • 4 oz of chorizo sausage removed from the casing
  • 1/2 cup cilantro leaves
  • 2 large scallions cut into about 2 inch pieces
  • 1 large jalapeno pepper, seeded and cut into large pieces
  • 1 clove garlic
  • 1 tsp ground cumin
  • 1/4 tsp salt

Put all of those ingredients into a food processor and pulse until they are very finely chopped and blended.

Scrape into a large bowl and add 1 1/2 lb lean ground beef.  Gently mix to combine.

Shape into oval burgers about 5 inches long and 3/4 inch thick (makes about 6 burgers)

Heat the grill.  Grill turning once, 8-12 minutes, until done.  Top each burger with a slice of Monterey Jack cheese with jalapeno peppers.

Serve in warmed tortillas with lettuce leaf, guacamole and a bit of pico or salsa
